Because my husband is part Mexican at heart (He served his mission in Mexico City, Mexico), we celebrated Mexico's Independence Day today! We went to a Mexican restaurant here in Oklahoma and had delicious fresh tortillas, enchiladas and a chicken chimichanga. La comida estuvo buena! We then came home and had fun breaking open a pinata that Jeff's younger sister, Jenny, made us! We had a La Bamba of a good time! VIVA MEXICO!

I know this is so random, but when I hear "Viva Mexico" I think of the "Donald Duck Ride" (as Kate so endearingly calls it) at Epcot in Disney World. Ahhh, to be back there right now....
Mexico!!! Ahh sometimes I wonder why I didn't go to Mexico and teach! I woulda rather lived on burritos than chicken feet anyday :) ha ha Mmmm I miss mexican food a lot and my "Mexican" family :) Hope all is well Michelle and Jeff!! I miss you so much!!! Love you XOXOX
